Pilih Coconut Sugar Atau White Sugar?

Pilih Coconut Sugar Atau White Sugar? – Jika ada pertanyaannya apakah memilih coconut sugar atau white sugar? Maka jawabannya adalah Gula kelapa atau coconut sugar, karena saat ini telah menjadi alternatif yang populer untuk menggantikan gula putih. Coconut sugar memiliki rasa dan manfaat yang besar bagi kesehatan. Gula ini juga dipandang lebih alami, dibandingkan gula putih.

Coconut sugar atau gula kelapa ini dibuat dari getah kuncup bunga dari pohon kelapa. Getahnya direbus di atas api sedang untuk menguapkan sebagian besar kandungan airnya. Produk akhirnya adalah gula kelapa, yang berwarna karamel dan rasanya mirip dengan gula merah.

Secara kimiawi, banyak gula kelapa identik dengan gula putih (mis. Sukrosa). Bahkan 70 hingga 79 persen gula kelapa adalah sukrosa; sisanya terdiri dari molekul glukosa dan fruktosa individual. Dalam hal kandungan kalori dan karbohidrat, tidak ada perbedaan antara gula kelapa dan gula putih, karena keduanya memiliki 16 kalori dan 4 gram gula per sendok teh.

Coconut sugar atau gula kelapa memiliki banyak mineral dari getah, terutama kalium. Memang benar bahwa 100 gram (sekitar 25 sendok teh) Gula kelapa memiliki 1.030 mg potasium, hampir seperempat dari nilai sehari. Tetapi jangan berharap mendapatkan banyak dari apa pun kecuali gula dalam satu atau dua sendok teh.

Menurut Lembaga Penelitian Makanan dan Nutrisi Filipina, gula kelapa memiliki indeks glikemik yang lebih rendah (35) dari gula putih (60 hingga 65), yang berarti gula kelapa atau coconut sugar ini tidak menaikkan glukosa darah dan insulin seperti gula putih.  Sepertihalnya madu dan sirup agave juga memiliki angka skala indeks glikemik indeks yang rendah. Nilai indeks glikemik 55 atau kurang dianggap rendah, nilai 70 atau lebih tinggi.

Intinya, secara nutrisi, tidak ada banyak perbedaan antara coconut sugar atau gula kelapa dan gula putih. Keduanya ditambahkan dalam makanan dan konsumsinya perlu kita batasi.
